• 350 g stale Tuscan bread
    • 220 g ripe vine tomatoes
    • 200 g cucumber
    • 90 g red onion
    • Basil to taste
    • 250 g water
    • 60 g white wine vinegar
    • Extra virgin olive oil to taste
    • Table salt to taste
    • Black pepper to taste


Cut the bread into slices and then into rough cubes. Transfer the bread into a bowl and add the water and vinegar. Mix well, so that the bread can absorb the dressing evenly, and set aside. Cut the tomatoes into small pieces. Peel the cucumber, cut off the ends, and cut it in half lengthwise then into thin slices.

Peel the onion, cut it in half and slice it thinly. Go back to the bowl with the bread and mix in the onion, cucumber and tomatoes. Tear the basil leaves and add them to the mixture.
Season with salt, pepper and oil. Mix again and keep in the fridge until you are ready to serve.
