Pair with Danzante Tuscan Red



Squeeze chopped spinach to remove as much water as possible. Set aside. 
Melt butter in large skillet adding onion and cooking until translucent, about 4-5 minutes.  Add salt, pepper, and nutmeg. Stir in spinach, then remove from heat.
Add layer of bread to a shallow buttered baking dish and top evenly with one third of spinach mixture. Sprinkle with one third of each cheese. Repeat layering until all ingredients are used, ending with a cheese layer. 
Combine milk, eggs, and a dash of salt and pepper in a large bowl then pour evenly over bread layers. Cover and chill for at least 8 hours, allowing egg mixture to be absorbed into the bread. 
Preheat oven to 350°F. Let strata stand at room temperature 30 minutes. Bake, uncovered for about 45-55 minutes until strata is cooked through. 

Let stand 5 minutes before serving.
